25 Random Things

I posted this on my Facebook page, in response to a challenge. I decided to recreate it here.

1. I wear six hats…Christian, wife, mother, daughter, accountant, volunteer
2. I have a picture of me wearing six hats.
3. I am blessed to have a husband who represents the kind of man I want our daughter to marry.
4. My daughter is the smartest, cutest, sweetest, most perfect little 7 year old there ever was, and I’m not biased. Well, yes I am biased, but this is *MY* 25 random things, so I'm allowed. HaHa!
5. I am turning 40 next week.
6. I have a strange sense of humor and really enjoy corny jokes.
7. My parents are still married to each other, and live close by.
8. I enjoy photography. Didn’t say I’m any good at it, I just enjoy it.
9. I enjoy scrapbooking, but my books are miserably out of date.
10. I am deathly afraid of snakes, even non-poisonous ones.
11. My hubby and I have a goal to visit all 50 states together during the first 15 years we are married. We’ve been to 33 so far, and will celebrate our 9th anniversary this year.
12. I am an avid and voracious reader.
13. I drive a Honda CR-V.
14. My cat will be 14 this year. He’s my FuzzBucket, but my daughter says he looks like a Cheez-It.
15. I enjoy rollerskating.
16. I don’t ski, and don’t especially enjoy snow.
17. I have a Facebook page and a MySpace page.
18. I detest unloading the dishwasher.
19. I’m a card-carrying member of Mensa.
20. I have a picture showing that I can be in six places at one time. Too bad I wasn’t wearing all six hats at that moment.
21. I avoid any clothing that must be ironed.
22. I have an unnatural fear of certain bridges, but I have been challenging myself to conquer those fragile spans.
23. I can’t wear gold earrings.
24. My hands go numb when I write, so I prefer to type everything.
25. My hubby is my best friend, and we choose to spend most of our (non-working) time together.

Chicken Cheese Soup

I recently made this delicious recipe. My hubby loved it and my daughter has been begging me to make it again. The neat thing is that almost all the ingredients are pantry staples. It's thick and creamy and yummmmm.

Ingredients:

½ bunch of green onions, sliced (or more if you like)
3 tablespoons butter (slightly less is okay, but don’t use spray instead)
½ cup all purpose flour
4 cups milk
1 quart broth, chicken or vegetable
1-12.5 oz can chicken breast, drained and fluffed
2 cups cheddar cheese
1 teaspoon Worcestershire sauce
¼ teaspoon black pepper (or to taste)

Instructions:

Note – Have all ingredients assembled and set aside.
1 – In a dutch oven, melt the butter and sauté the onions until tender (approx 10 minutes), over medium-high heat.
2 – Reduce the heat to MEDIUM and stir in the flour.
3 – Slowly add the milk and chicken broth, stirring thoroughly.
4 – Stir in the Worcestershire sauce and black pepper.
5 – Continue to cook and stir until the soup is thickened and bubbly.
6 – Stir in the chicken and the cheese and reduce the heat to LOW.
7 – Cook and stir until the cheese is melted, just a couple of minutes.
9 – Serve hot.

Note – No extra salt is needed. Between the broth, canned chicken and Worcestershire sauce, there is plenty of saltiness. We did find we needed more black pepper.

Additions:
For extra flavor, consider adding 1 cup shredded carrots (cook with the onions) or 1 can drained corn (add with the chicken).
