Canning

I'm learning something new this summer...how to can.  Each summer, we try to run down our freezer contents so that if a hurricane hits and we are without power for days, we don't lose a whole lot of food.  Well, a month or so ago, a friend of ours convinced me to give canning a try.  I can only can acidic foods, since my pressure cooker incident last year*, but it's been fun.  So far, I've canned:

-salsa
-bruchetta
-antipasto relish
-corn relish
-strawberry preserves
-blueberry-citrus conserves
-tomato juice
-tomatoes

It's been a fun learning experience.  Next project:  spaghetti sauce.

But, first, I have to paint the kitchen.  Princess E's birthday party is less than 3 weeks away, and I want that task behind me.

*I don't think I mentioned it, but my pressure cooker exploded last year.  That's not something I wish to experience ever again.
