In honor of St. Patrick's Day, I thought I'd post a recipe. This is what our family is having for dinner tonight, along with roasted fingerling potatoes.
Cabbage Hotdish
Ingredients:
1 medium head of cabbage, coarsely chopped
1 can tomato soup
1 lb ground beef
1 medium onion, finely chopped
2 cloves chopped garlic
Salt and pepper
Directions:
Saute onion, garlic and beef until thoroughly hot, but not completely cooked. Season to taste
with salt and pepper.
In a casserole, alternate layers of cabbage and meat. Pour the can of tomato soup on top.
Bake 1 hour at 350F.
This recipe reminds me so much of cabbage rolls. It just doesn't require as much work.
